To replace the teams logos in-game, here's the way I do it:
Open OOTP>saved_games>nlb.lg>news>images>team_logos
Delete the contents of the folder.
Then unzip the folder(s) I send to either your desktop or straight to that folder.

Here are the teams for which there don't appear to be logos:
Granby Blue Sox
